Are you wondering why this is called half and half? No, I did not drink coffee creamer for dinner. Rather my dinner was half breakfast and half lunch/dinner.
Heres the dinner part…Tofu Taco Salad. I made this up on the spot…Heres the recipe!
For the tofu…
- 1/4 pound firm tofu, crumbled
- 1 tsp taco seasoning
- 1 tbsp salsa
- 1/4 cup water
I mixed the first couple things together, coooked them in a skillet until warm, the added the water to ‘hydrate’ it, drained it.
Now for the salad…
Toss 4 cups leaf lettuce with 1/2 cup bell pepper (chopped), 1tbsp salsa, and 1/3 cup corn. Then I shook it all together with the tofu mixture, poured it onto a plate, and crumbled 2 tortilla chips on top of it. Yummy…
Heres the breakfast part!!! A slice of toast with 1/2 tbsp apple butter, and plain Stonyfield with honey.
For desert I enjoyed a Kashi Oatmeal Dark Chocolate cookie. Yummmmoooo. These are so good.
