I love omelettes! I made mine with this recipe…..
- 1/2 tsp olive oil
- 2 eggs (Organic and cage-free…)
- 2/3 cup chopped bell pepper
- 1/2 cup chopped tomato
- 1 tablespoon of natural cheddar (shredded)
I also had two peices of natural whole wheat toast with a 1/2 teaspoon light butter and a teaspoon of apple butter on each.
After dinner, I had one dark chocolate square and a couple of dark chocolate coffee beans…
