We went to Whole Foods today for snacks for camp. This is what I got…

  • Jocolat Chocolate Coffee bar
  • Cinnamon Roll Lara bar
  • [2] Peanut Butter Z Bars
  • Chocolate Brownie Z bar
  • Chocolate Chip Peanut Odwalla bar
  • Banana Nut Bread Clif Bar
  • Chocolate Peanut Butter Clif bar
  • Cherry Pomnegranite Optimum Energy Bar

And….

  • Almonds
  • Filbrets
  • Pecans
  • Cashews
  • 1 pound of raisins

Plus lots of samples…

  • Cube of Gouda cheese
  • Veggie chip
  • Peice of pineapple
  • Organic Potato chip
  • Carrot with natural ranch

YUM! I love the grocery store;]

 

Half and Half July 30, 2008

Are you wondering why this is called half and half? No, I did not drink coffee creamer for dinner. Rather my dinner was half breakfast and half lunch/dinner.

Heres the dinner part…Tofu Taco Salad. I made this up on the spot…Heres the recipe!

For the tofu

  • 1/4 pound firm tofu, crumbled
  • 1 tsp taco seasoning
  • 1 tbsp salsa
  • 1/4 cup water

I mixed the first couple things together, coooked them in a skillet until warm, the added the water to ‘hydrate’ it, drained it.

Now for the salad

Toss 4 cups leaf lettuce with 1/2 cup bell pepper (chopped), 1tbsp salsa, and 1/3 cup corn. Then I shook it all together with the tofu mixture, poured it onto a plate, and crumbled 2 tortilla chips on top of it. Yummy…

Heres the breakfast part!!! A slice of toast with 1/2 tbsp apple butter, and plain Stonyfield with honey.

For desert I enjoyed a Kashi Oatmeal Dark Chocolate cookie. Yummmmoooo. These are so good.

OMELETTES!! July 24, 2008

I love omelettes! I made mine with this recipe…..

  • 1/2 tsp olive oil
  • 2 eggs (Organic and cage-free…)
  • 2/3 cup chopped bell pepper
  • 1/2 cup chopped tomato
  • 1 tablespoon of natural cheddar (shredded)

I also had two peices of natural whole wheat toast with a 1/2 teaspoon light butter and a teaspoon of apple butter on each.

After dinner, I had one dark chocolate square and a couple of dark chocolate coffee beans

Se La Vi! Good night…

We went to Borders this afternoon to return a few things. I made a smoothie and put it a coffee mug so I could take it.

Heres the recipe….

  • 1/4 cup Stonyfield Plain Nonfat
  • 1/3 cup 100& OJ+Calcium
  • 1/2 Gala apple, chopped
  • 1/2 small banana (super ripe)

Blend it all in a blender along with a handful of ice. I found it was pretty good, saying I had never drinken a smoothie with apple in it!

When my Mom got home she brought groceries. She got blueberries, yams, milk, Garlic Expressions, watermelon, and bananas. I sneaked some of the blueberries

I think we’re making omelettes for dinner…that or Pork Chops (I’ll make seitan chops)…

 

Oatmeal is amazing! July 23, 2008

I had oatmeal for breakfast…had the following-

  • 1/3 cup quick oats
  • 2/3 cup organic skim milk
  • 1/2 of a large (ripe^-^) banana
  • 3 tbsp blueberries
  • 5 almonds
  • 5 pecans
  • 2 tsp Kema PB
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup GOLean! cereal

On the side I had…

  • 1/2 cup Stonyfield nonfat plain yogurt
  • 1 tsp honey (Mixed in)

YUMM!!! Unfortunately, I have to eat an early lunch before golf. I am planning on Medditerian Tofu (from Vegan Expess)

  • 4 ounces of Firm Organic tofu (I pressed it and froze it so it would be very firm)
  • 1/2 cup chopped tomato
  • 4 sundried tomato peices
  • 2 cloves of garlic
  • S&P
  • 1 tsp olive oil

I had some baby carrots and half a wheat pita pocket. Hummus with both…Yum……

 

Snacky lunch and Amy’s… July 15, 2008

Well, I took leftover Pasta salad with beans to the pool…but I think I left it in the fridge for to long. It tasted fermented. Bleh, I had 1 or two bites and threw it away. So my lunch ended up being:

  • Kashi ‘Cherry Dark Chocolate’ Granola bar
  • Raw broccoli
  • Applesauce

I did about 45 minutes of breastroke. I feel pretty good except my face is super dry…must be a reaction to the chlorine or somethin’. Hmmmm…

Later, when we got home I had an Amy’s B-fast burrito. It has tofu, potatoes, tomatoes, and black beans. Yum! I also had baby carrots, almonds and peanuts….

Oat-Germ Pancakes and KIWI!

Breakfast…Late again, stayed up all night reading And If You Play Golf, Your My Friend, the best Harvey Penick book ever.

  • Oat-Germ pancakes (See below)
  • Kiwi
  • Grapes
  • 100% Orange Juice +  Calcium and Vitamin D

Weird that they are called Oat-Germ– they only have one tablespoon of each oatmeal and wheat germ. They were tasty, though. Heres the recipe–

  • 1/4 cup whole wheat flour OR spelt flour
  • 5 tablespoons skim milk or soymilk
  • 1/4 tsp baking soda (Heaping)
  • 1/3 an egg white (I use dried ones you mix with water so its easy  to have 1/3 of one…)
  • 1/2 tablespoon of canola oil OR applesauce
  • 1 tbsp wheat germ
  • 1/4 tbsp cornmeal
  • 1/2 tbsp oat bran
  • 2 tsp honey OR agave nectar
  • 1 tbsp rolled or quick oats
  • Optional- For a chocolatey bite, I sometimes add 1/4 tbsp cocoa powder and 4 grams 72% dark chocolate.

1. Mix all ingrediants together.

2. Pour by the 1/4 cupful onto a greased pan or skillet. Coook for 1 1/2 minutes on first side, and 1 minute on second side.

3. Makes 1 serving, 3-4 pancakes.

I also have it for 8 servings if anyone want it. x)

We’re probably taking lunch to the pool, so no idea if I’ll blog.
